Drenched in bittersweet caramel, these silky soft apples create a glorious topping for a dead-easy, baked-in-the-skillet cake. Be sure to cook the fruit and caramel until the syrup bubbling at the edges is practically burnt. That rich, deep color is how you know the dish will be packed with flavor.

Questions about pans
Wondering if a cast iron pan would work here?. Concerned the caramel would become too dark and/or it would not turn out of the pan easily.

Questions not a review
If I make this the day before Thanksgiving, will it keep well? And would it need to be refrigerated?

Love, love Cardamom
Haven't made it yet, but just from reading the recipe and ingredients, know I will love it. Anything with Cardamom. What I really need to know is, after it is cooled, can it , or pieces of it, be frozen?

Easy and delicious
Excellent recipe. Love the cardamom, and no cinnamon for a change. So often we equate apple recipes with cinnamon, which I find always overpowers cardamom. Lovely change.

Question - 12 inch version?
I only have a 12 inch All Clad skillet - how should I adjust? Up the recipe? Or just make it thinner? (I have 10 inch skillets but all are non-stick. )
