No mixer needed for this easy berries-and-cream treat. A blender makes quick work of the cake batter and the mascarpone filling is easily whipped by hand with a whisk. The components can be prepared in advance. The cake layers will keep for 24 hours at room temperature. The berry mixture and mascarpone cream can be refrigerated 12 hours ahead. Or to assemble the cake in advance, hold off adding the berries; refrigerate the cream-topped cake, uncovered, for up to six hours. When ready to serve, let stand at room temperature for 30 minutes, add the berries, drizzle on the juices and serve.

Tip

Don’t overwhip the cream filling or it will be too stiff to spread smoothly.

100% EASY and DELICIOUS!!!
I’ve been longing to make this cake and finally had the chance! It was a real show stopper!! We had a backyard party with 9 people for dinner. The summer berries and that mascarpone filling was the best combo. I cut large pieces (10) and after a filling dinner everyone ate their slice! I got rave reviews all around. It felt like it was a light cake and it wasn’t overly sweet. I had good results making the components ahead. I froze my cake layers and defrosted in the fridge. I made the berries in the morning and the frosting as well. I did use my kitchenaid and paid attention to soft peak stage. I did give it a quick whip in the mixer just before assembly. I will make this again and again!! Thank you so much for this easy, delicious, and beautiful recipe!

Question: What does serve right away mean?
I was hoping to make this to carry to a restaurant to share after dinner. I'd assemble the cake up to the top layer of mascarpone and then pour the top berries and top with sauce myself when we are ready to eat it. But I think this may better be suited to wait for my own backyard party at home, instead. So what is the time frame intended by saying "serve right away"? Within 30 minutes? Keep the cake chilled until putting the berries and sauce on top? Thank you! Can't wait to try this cake!!

Fabulous--and not overly sweet
Made this in 8 inch cake pans and the cake came out nice and high with good texture. I used strawberries and blueberries and blueberry jam for the berry filling and it was perfect – – sweet but not overly sweet like a lot of desserts can be. Very pretty, very tasty!

Modifications?
Hi! I’d like to make this for July 4th to bring to a BBQ - at a mile high elevation. Can you suggest any modifications to the recipe to accommodate for the altitude?
