To create this hearty stew, we took inspiration from cholent, a long-simmered Jewish dish traditionally made for the Sabbath. It usually includes beef along with barley and vegetables, but we opted for a lighter, fresher meat-free version with chunks of earthy-sweet butternut squash. Be sure to use pearled barley, which has been polished, or “pearled,” to remove the outer husk and bran layers; this process shortens the cooking time. To enhance the barley’s nutty flavor, we toast the grains for a few minutes before simmering them.

Hearty and Flavorful
This is going to be a frequent flyer in the winter months; butternut is my favorite winter squash and barley is satisfyingly chewy. I forgot to try the suggested horseradish garnish, but I bet it would be a nice touch.

Creamy dreamy deliciousness
Deeply flavorful and nutritious, too - and such a delight to eat. The chewiness of the barley and the silkiness of the squash pair beautifully. Gets another boost if you top it with a little whole milk yogurt and diced avocado. This one is in my rotation for sure!

Excellent
Excellent combination of flavours, smells, and textures. Staying in my recipe book. I added a pinch of hot paprika for some heat.

I really wanted to love this!
It sounded delicious and hearty. Unfortunately it was mushy and bland for my taste. This is the only recipe so far that has not been stellar. Can't like them all.
