Pastel de alcachofas, or artichoke cake or tart, is popular in Peru, one of the world’s largest producers of the prickly edible flower buds. This tart is similar to quiche, with artichokes enveloped in rich custard, flavored with garlic, herbs and Gouda and Parmesan cheeses. For ease, we use frozen puff pastry as the crust instead of homemade pie dough. Leftovers can be covered and refrigerated for up to three days; bring to room temperature before serving.

Tip

Don’t use marinated artichokes, which are too highly seasoned. Canned artichoke hearts packed in water are the right type for this recipe. Be sure to pat the artichokes dry so their moisture doesn’t water down the filling. When placing the artichokes in the filling, don’t fully submerge them in the custard. The finished tart looks best when pieces are visible on the surface.

Great easy dish for a non-baker
Using the puff pastry made this tart super easy. Very tasty. Made a wonderful vegetarian dinner with a salad and grain. Would definitely make again!

Nice Alternative
I did use marinated artichokes. It was all I had. Drained them well and reduced the amount of olive oil. Added lemon zest and hot sauce. Everyone loved the tart. Planning to make it again this weekend. Flexible recipe with lots of possibilities for variations.

Delicious
Made two of these for Easter. Really delicious and easy. My only comment is that my tart stuck to the pie plate pretty badly so I would spray with Pam or butter.

Sounds good
This looks easy to make, but I am going to try using Trader Joe's frozen artichoke hearts as I already have a bag of these in the freezer. Will try just thawing and patting dry before adding to this pie (which really sounds more like a quiche).

Better with par-baked pate brisee
The first time I followed the recipe. Maybe the tines of my fork are thicker than yours The filling seeped through the holes and I depended up with a very delicious, but soggy, tart. I made it again last night with a partly baked pie crust and it was crispy on the bottom. A hit for sure!!
