In Tuscany, Antonio Mattei Premiata Fabrica di Biscotti is a bakery that has been churning out the twice-baked cookies for more than a century. Their biscotti are classic and simple, just flour, sugar, eggs, almonds and pine nuts. On the other hand, cookbook author Giulia Scarpaleggia includes citrus zest and honey for richer flavor and chewier texture in her homemade version. This recipe bridges the two—our cookies have satisfying snap, with floral and citrus notes from a little honey plus lemon and orange zest. While the biscotti are great the day of baking, their flavor and texture are best the following morning—perfect for dunking in coffee or tea.

Makes about

28 biscotti

Tip

Don’t skip the step of rubbing the orange and lemon zests into the sugar. This draws out the zests’ essential oils and evenly distributes them for bright citrus flavor throughout the biscotti.

Delicious with a citrus taste
I have made biscotti before and found this recipe easy to follow. I was afraid it was going to taste like Fruit Loops, but it had a citrus taste and was not too sweet. My logs did not have crack, but it still tasted delicious. Just wanted to let others know that if it doesn't crack as many biscotti do, that it is still good. I found it hard and crisp but that is the way I like my biscotti. I ate a few pieces yesterday but better this morning with coffee for dipping. I will add this recipe to my biscotti recipes and I will make it again. Thanks Milk Street.

Great citrus flavor
These are great dipped in coffee or on their own. The flavor almost reminds me of Fruity Pebbles/Froot Loops cereal somehow. My only critique is that they are almost too sweet, but I would be apprehensive to reduce the sugar as that might effect the structure of the biscotti.

Love this reipe, but need a little advice
I LOVE this recipe!! So easy!! Friends have been gobbling them up. I used honey roasted almonds (a mixture of two varieties) and added some vanilla extract. The recipe is perfect just as it is but I love to do tiny low risk experiments. I now need to invest in some better quality aluminum sheet pans. . . Keep these types of recipes coming.

Great way to start the day in your coffee
This cookie has a hint of citrus! It is delicious as a dipper. I will probably add fennel seeds next time I make it.
